St. Louis Ribs three ways

So last night trimmed up and rubbed three racks, two rubbed with Rufus Teage, one with Three Little Pigs Hint of Cherry.
This morning got the WSM cranking with Stubbs, trying a new way for me using a fire brick. I liked it.

Oh almost forgot, Yukons quartered seasoned with EVOO, Kosher, granulated garlic and fresh ground put on bottom rack

The California Pittmasters got me inspired today

One rack with the Rufus Teage plain no sauce and one rack with a fabulous sauce I got from Costco Pineapple Habanero, and one with Sweet Baby Rays with some Siriacha added, Just about done, all done to toothpick test.

They came out real good, pineapple habanero and Baby Rays siriacha tied

Great cook! Ribs look awesome....

Ole rolling rock ! Founded and brewed local in Latrobe Pa until sold to A-B.. Home of the picksburgh stillers football training camp... My grandmother used to get a case of Returnable Rolling Rock bottles delivered to our house every Friday for years... Her staple lunch a bottle of rolling rock, a few slices of extra sharp cheddar cheese and two handfuls of triscuits and about a half dozen Winston cigarettes ! Memories...
