Split Pea Soup with homemade Bacon

By far the best SPS I've ever had. The homemade bacon took it over the top

4 carrots
4 celery
2 TBS garlic
2/3 cup Flat leaf Parsley
2 LBS split peas
2 TBL Thyme (fresh)
1 cup yellow onion
12 cups Chicken brother
Fresh Ground pepper
Salt

This is it going on, the bacon is not in yet

3 hours later, added the bacon and dropped the temp from high to low

6 hours, dropped the temp from low to warm

8 hours later, served with Costco Cheese Bagel

Did I say it was amazing?

On a side note, while at Costco today, I got the secret ingredient for our next pizza cook

This was done in the old crock pot, I picked up the new one today while this was cooking. I'm confident the new crock pot will be great because of the ability to control it so much better
 
Looks amazing Chuck. love the bacon idea. Barb and I love SPS but it's still to hot for me to make it yet.
What's the 12 cups of chicken brother?
 
Chuck that is some awesome looking soup, great job. I just wish we get some cold weather so we could make some SPS also.
 
The SPS looks phenomenal. A couple of quick questions, with 12 cups of broth, what is the final consistency? I assume that the 2 TBS Garlic is garlic powder or is it chopped garlic cloves? Also, about how much homemade bacon did you use?

Hi Bob, yes the garlic was garlic powder, not fresh chopped. The recipe posted is double from what we normally do. I too was kind of concerned with 12 cups of chicken broth, but it thickened very nicely, I would say the consistency is/was exactly what you would want. I'm going to guess there was maybe a little over a pound of bacon. It was bacon chunks and I have to tell you, the smoke flavoring put this over the top. I used Hickory to smoke the bacon, and was thrilled with the outcome of the bacon and the soup. I forgot to say there was a couple bay leaves in the soup too. Note: The garlic powder and the Thyme are tablespoons, not whatever my goofy TBL or TBS might mean in the real world. One final note, the direction originally called for cooking on high heat for 8 hours. We only cooked on high heat for three hours, and the remaining five were cooked on low. I guess that depends on your crock pot that one gets much hotter than our other crock pots
