Spatched wirh scissors 8 legs and soaked in a buttermilk , real Hungarian paprika, garlic and onion powder. Thyme and S&P
I like adding the wood on the grate. Seems to last longer and gives a better smoke.

Putting the wood on the grate is a "grate" idea. I haven't made KFC vortex chicken for a while, and this reminds me I need to do it again tout de suite.

Just tried putting a wood chunk on the grate for the first time last week. Liked the lighter smoke and longevity.
 
The marinade with hot Hungarian paprika and the Louisiana fry mix gave these a nice kick. Moreso then just using the breading ( Wife noticed)

Got my attention with this one Timothy, really looks good.
Been doing the wood on the grate for quite a while now, much longer smoke time then on the coals.
 
Looks great Timothy, has to be easier than lollypop drummies.
Louisiana fry mix is on the pantry list and wood on the grate <<<<<< stealing that idea from you...
