Spatchcock Chicken making me fall in love with my Performer.

Finally got around to cooking this whole chicken that's been in the fridge. And then finally got around to posting it. This experience was my first time realizing how much I am falling in love with my Performer.

The star of the show. Backbone out and breastbone broken. Marinated in Italian Dressing overnight. Cleaned up and rubbed down with Weber's Kickin Chicken.

The supporting cast. Seasoned in salt and pepper and propped up to look cool.

Cooked indirect at 300 for about 2 hours. Did this on the gasser with apple wood in smoke box cause I got home late from work. The whole thing kinda frustrated me cause I'm not very good with my timing yet, and when wife and kids are waiting on dinner I rushed to throw the skin down direct. On my kettle this wouldn't have been a problem. The heat would have been equally distributed and really cooked the chicken evenly and more quickly. On the gasser the chicken has to be far away from heat to avoid burning one side, but loses SO much heat out the back vents.

Thanks for looking. The chicken was delicious, but I know it could have been so much better....guess I gotta keep working on it as frequently as possible. :grin:
 
My mom used to do flank steak in Italian dressing on the grill. It was great. Your chicken looks super tasty.
 
Thanks for the kind words guys. We're all our own worst critic, I guess. I think I was just venting abour the actual cook when I posted. The food was really good, family was happy, left over quesadillas have been awesome the past few days. Gotta roll with the punches, I guess. Thanks for bringing it back into the perspective with the good words.
 
That's the cool part. As you learn what you like and how to get there, you get to eat pretty good chow! Nice cook! If it was me, I'd definitely enjoy that meal and critique it as I finished my plate! LOL
