Spares done indirect on a kettle

Been windy almost every day lately, especially on the warmer days. Got into the high 60s today with just light breeze so cooked a slab of spares. No wrap on a kettle.

Just a minimal trim and removed the membrane.

Running between 250 & 275 over B&B briquettes with some small chunks of Hickory. Spritzed with ACV & Maple Syrup at 1 hour and every hour after.

Done in just over 4 hours. Pulled at 195 and rested for 15 minutes.
