Here are some spares I cooked yesterday. The temp on WSM was very consistent staying between 270 - 280 most of the cook. They seemed a little dry so I think I over cooked them a bit.

I think they look great. Might be what just happened to me cooked the ribs the exact same way I always do and seemed dry. Might have just been the ribs themselves.
