Souvlaki

I was going to do this for the throwdown, but my wife accidentally got pork tenderloin instead of loin. No worries though, it worked out fine.

Two tenderloins, with a bamboo skewer through each then deeply scored with a sharp knife.

A bath of olive oil, red wine vinegar, lemon juice, s&p, oregano and minced garlic (kids took the first couple of pics for me).

Almost done. I didn't use enough charcoal to get the heat I wanted, so partway through cooking I put the grate from a Smokey Joe directly on the coals. Note that I'm using the bottom of a WSM, because Santa needs to bring me a kettle.

Resting.

I used skewers to enable vertical slicing (another kid pic).

Plated on fine china with homemade tzatziki, a greek salad and some potato wedges from the oven. The pita I picked up at a Middle Eastern market yesterday was so huge that we used halves of it. My whole family got stuffed and we only used three pitas, these things were like manhole covers. But very tasty!

The family is on board with souvlaki now, we all enjoyed it. Thanks for taking a look!

Great cook Ethan! That's one of my favorite grill meals, thanks for the reminder. And thank your wife for buying tenderloin, I'm about to post my Throwdown entry.
