Southwest Chicken Salad

Pretty much a Jack in The Box Copy Cat salad. We even used their dressing.

Roasted a couple of ears of corn.

Boneless skinless chicken breasts first marinated in some Chiavetta's then seasoned with some Weber's Kickin' Chicken

The salad, mixed lettuce, shredded cheese, grape tomatoes, red onion,cucumber,black beans, the roasted corn

The plated pic minus the dressing. It is hard to take a pic of a salad and make it look good, any way we enjoyed it.
