So I stopped by this place that has several different kinds of rubs, bbq sauces, and smoke woods to choose from. After taking a look this is what I went with.

The bbq sauce is a cherry Chipotle, and the wood is olive wood. Something I've never seen before. The rub is Dizzy Dust, which I have on some spare ribs at the bottom of the picture.
Here's a new setup I tried on the performer.

As you can see, I used one charcoal basket on the right of the coals, and nothing on the left. I thought this would give me more charcoal to maximize cook time. I used 18 lit coals to start.
Tried to keep the lit on the left so it would slowly burn to the right and down.
Here we are after about 5hrs. This setup worked very well, and I didn't have to add more charcoal to it. I probably could of got close to 8-9hrs out of this.

About 30min later after saucing the ribs.

Good to go!

Well there you have it! The olive wood was very good, and had a great smell to it. It's a light flavor that's not over powering. Like apple. If you can find it give it a try. I'd like to try it on salmon sometime too.
