Some Nolan Ryan Steaks on the Spirit 320

These were close to 2" thick so it was a reverse sear.

All up to approximately 125*F IT. Resting for 10 mins before the sear:

Turned them for hatch marks and brought them up to 135, 140 and 145*F using the thermapen MK4.

Thats a one hundred mile fastball on those “Nolan Ryan" steaks, if i'm in the right ballpark.
