The kids came over for dinner last night.
I made some ribs and the wife did the rest with homemade bread, corn and some deli salads.
The hatch chile potato salad from Safeway was a first for us and we liked that a lot.
I considered cooking the ribs in single style (or whatever that’s called) but I chickened out.

Interesting thing about these ribs.
One rack came from Costco and the other came from Safeway.
They looked identical in every way, they even tasted the same and were placed the same way in the pit but one rack ended up with near an inch of bone pull back showing and the other had no bones showing when done.
Hmmm 🤔.

Love those hung ribs! I have not hung ribs, I've hung Tri Tip. I've got to do ribs this way. My experience with "pull back" is: The more meat, the more pull back, which is opposite how it works in my mind, seems like the less meat should be more pull back. Hatch Chili Potato Salad this early in the season? Man I hope so, I absolutely love home-made Hatch Chili Salsa
 
I would love to have powdered hatch chili that tasted fresh, same goes with jalapeño.
I caught myself adding fresh jalapeños to a bagel with cream cheese the other day and that tasted good enough to serve.
I can’t get enough of those flavors.
Heck I’d toss them on some eggs if I was given the chance.
I’m not the guy that eats reapers for show or even likes most hot wings I’ve had but I do dig the taste of habanero and several other peppers.
