Sockeye!

Copper River Wild Sockeye Salmon (Costco), seasoned with salt, pepper, fresh dill, lemon and butter. Cooked indirect on a cedar plank over Cowboy lump, along with some bacon wrapped asparagus drizzled with Balsamic glaze and served with basmati rice.

Wow, that looks amazing. Was that fresh or frozen? Need to keep an eye out for that on the next Costco run.

Hey, thanks. It was fresh, but I suppose it could have been previously frozen, dunno. It was a bit more expensive than the farm raised salmon, and seemed to be leaner. It was good. The cedar plank was a good method, but I think my next salmon will be lightly glazed with brown sugar, maple and cayenne, and smoked a bit with hickory, no plank.
