So this was meant to be my entry for throw down #15 spare ribs, but somebody procrastinated. I did the cook on the 7th, but forgot to post it. Oh well, I was busy doing wings for a group of friends at the same time so I didn't really put the TLC into it like I should have. So here ya go.

Well there ya go! They turned out pretty darn good. Good smoke ring, great flavor, nice and tender.

Nice! How many briquettes did you start with? At times I struggle w my heat on my performer.
I put about 10-12 lit on top of a charcoal basket of unlit. It worked quite well and came up to temp in about 15-20min. I used both the top and bottom vents to control temp.
