Smoked some Pork Spares on the 22.5 WSM


 
Beautiful looking ribs, nicely done. Your starter kindled some fond memories, my Dad use to use one of those, don't see them much anymore.
 
Very nice looking ribs. If they taste half as good as they look, everyone's in for a treat.
 
Ran them at 275 for 2.5 hours then put them in foil for 1.5 hours. Sauced them and left them unwrapped for 30 minutes. Guys at work gave me money to buy some more and smoke them again. Might have to get me a second WSM to handle the cook.

I purchased that rub. I found McCormick's smokey and sweet to be a very good cook. I am going to start to dabble into making rubs and sauce once I think I have perfected my technique. Going to repeat that last and as long as it comes out the same It will be time to move on.
