Smoked Slaw - How would you do it?

Just saw an episode of Diners Drive-insand Dives and there was a restaurant that made a pizza with smoked slaw.

How would you approach smoking cabbage or another or similar vegetable?

I've not done smoked slaw. I have done smoked cabbage by coring it, placing butter and a chicken bullion cube in the core, wrapping it in foil and cooking it along side meat for about 3 hrs until tender.
