Kept them at about 350-400, hickory chips, cooked for about 1.5 hours, and rotated them halfway through. They are not fully cooked, I leave a little left since we typically use them in other recipes. Pretty much anything that calls for an onion, we use these instead. Great in quiche, and great sauteed or fried.
Milk butter simmer till soft, thicken with corn starch, makes a awesome side dish that is very mellow no matter how strong the onions were when fresh. don't forget salt/pepper.
