Smoked Fish in a SS Performer w/ CB Stacker

Recently got the CB stacker delivered and wanted to smoke something. Had a load of fresh fish in the fridge so I went at it. The type of fish was yellowtail and yellowfin tuna. I cured/brine it in brown sugar, canning salt, granulated garlic, and some fresh cracked black pepper. Here are some pics of the cook along with pics of my rig.

They came out great Jay, I could eat 3 out of 5 from the first picture no problem lol Love some smoked fish.
 
Thanks guys. This was my first attempt at fish and it came out great, but you have to like the taste of fish if you plan on smoking cuz the fish flavor stands out. I used 4 cups of brown sugar to 1 cup of salt and the sweetness is at a minimum. Seems the salt penetrates alot more then the sugar.

That CB stacker looks awesome on the SS performer, in my mind the best version of this BBQ.
Smoked fish looks awesome, did you catch it yourself.
Yellowtail i bbq as it always tastes fishy, and i prefer Bluefin over Yellowfin on the smoker.
But what the hay fresh fish is always good.
 
I love BBQ Tuna, you killed it Jay. Did you catch them yourself? I'm going Dorado fishing next month (Mexican Tuna, LOL)
