Smoke Roasted Salsa + Preview Post feature warning

Trying to kill 2 birds with 1 stone here.
I had a detailed post ready and decided to try the Preview Post feature.
Then, thought I was only closing out only the preview.
Nope, lost the whole thing, so be careful if you're computer challenged like me.:)

Here is a condensed version, no recipe provided, since I made it up as I went along.
Peach wood smoke roasted some of the ingredients.
Also added some sweet onion, another jalapeno, the other half of bell pepper, salt, lime juice, apple cider vinegar, and cilantro.
Cooked it down a bit, test tasted, and decided to add a can of Rotel tomatoes too.
No hot water bath used, it was made for my son, and it won't last long.

It turned out rather well, but too much cilantro for my tastes, but not my son's.
I prefer the peach salsa that my daughter makes.

Beautiful Bob. Look at those colors! Looks like just the right amount of cilantro to me...
Have you ever made roasted tomatillo salsa? I recommend it! I'll send you a recipe if you need it.
 
Bob that looks both colorful and tasty. It sounds like your son and I have the same taste in salsa. Very nice indeed!

Bob - beautiful stuff! I nearly did the same thing when I was posting my fried green tomatoes last night, so I feel your pain.

Gary - add me to the list that would like to see your tomatillo salsa recipe.
 
I feel ya Bob! have done that myself! Wonderful cook! Great looking pictures! Bet it was awesome salsa!
