Around here you'll pay alnost as much for just a flat as you will for a whole packer brisket. So there's not much point. At least as long as you got a freezer. There's just me and my wife but I still cook full briskets.... We eat it for a couple of days then I slice, vacuum seal, and freeze the leftovers.Just two of us, so the small flats are all i cook now
