after a brief bath in an apple juice brine, these two were then seasoned with penzey's california seasoned pepper
using a smaller kettle with some black charcoal, it's about ready right outside the kitchen door
a few minutes each side for looks
then indirect until perfect
served with Curtis Greens and skillet baked onions & taters
these chops were probably the best i've grilled in ages, quite tasty
