Scoops and Tony's Refried Beans

Had some of Tony’s great homemade refried beans (thank you Tony) leftover from another cook. I took some Scoops and put a little of the beans in the bottom and a little 4 blend Mexican cheese on top of that. Popped them in the micro for about 30-40 seconds then put a little homemade salsa on the top.
Ended up with a really quick simple good tasting little snack.

Lol. My wife did this last weekend at my SILs. I called it 'bite sized nachos.' Has everything you want.

As a side bar, I have to say that Tony R and Maribel have inspired many here and on other sites. I've seen many tributes to them. I have to give them props for sharing their recipes and cooks with the greater BBQ community. Thanks!!
 
looks great....just add a jalapeño slice under the cheese and on top of the beans and you are golden :)

That’s next with some taco meat mixed in with the beans and that jalapeno, got to say along with everyone else Tony and Maribel have inspired me and lot of others I'm sure. Along with Jim L. Bob C. Dwain, Bill. S, Brian D. and of course our host Chris A and many others.
My outdoor cooking skills have improved 1000% and thank you to all that made that happen!

When we first joined we were afraid that you guys wouldn't want to see Mexican dishes being made but looks like you guys enjoy them. And the feed back was wonderful.
