Saturday Tri-Tip Roast

2 pound Tri-Tip roast seasoned with Head Country Rub.

Put on the WSM with a chunk of hickory and a chunk of cherry wood.

Pulled at an internal temp of 145. Wrapped in foil to rest.

Sliced.

Plated with some Knorr Rice Sides Tangy BBQ flavor and my favorite Costco olives (jalapeno and garlic stuffed)
and onion sauteed in the roast juice from the foil.

The Tri-Tip was extremely juicy and tender and the olives were delicious as always. The rice is
okay but nothing to write home about. Overall a delicious meal.

I used to buy those olives at Costco, but sadly haven't found them for a couple of years now.
 
Thanks everyone for your kind words. :) Bob, I use to get them all the time when I lived in Washington state, but couldn't find them here. They just started back at the Costco in Jacksonville, FL, so maybe your local stores will start carrying them.
