Saturday night Brisket...

Started the day off really early....

That's the time the brisket went on the WSM this morning.

But before that pulled it out of the fridge where it was resting after a spice massage last night.

A few hours in the WSM is chugging along

About 5 hours in....

Wrapped it in foil and let it cook for another 6 hours

Pulled out the foil and ready to slice

Juicy, tender, nice smoke ring, and decent bark.

Was really good. This was my first brisket and I am pleased with the result. Will definitely have to do brisket again in the future.

Well you started early this successful day! Your brisket looks really beautiful. Bark is great and moistness too. I need some more details ..... Cooking T, water in the waterpan (it doesn't seem to be any), foil with....

Temp: 225-250, fluctuated during the cook.

Never used water in the water pan, just a ceramic potting dish.

Foiled with nothing in it. Just the good natural juices that collect from the brisket as it cooks in the foil.
