Salsa Verde Chicken Burritos and White Bean Turkey Chili

Some ugly chicken thighs, the skins shrunk on me. No big deal, the skins were given to the dog and the chicken was still moist and was getting shredded up anyway.

Removed the bones then placed the chicken meat in some chicken broth for about an hour than added about a cup of home made salsa verde and shredded the chicken. I used some Hatch chiles I had in the freezer and they had a real nice kick to them.

Some white bean turkey chili using up the left over turkey. Used a lb of dried white beans, sauteed onion, garlic,chicken broth, turkey, cumin, oregano, and about a cup of salsa verde too.

This is how I have made it in the past when I didn't have any hatch chilies. Adjust the peppers to you liking or if you Jalapenos are hotter than normal

15 tomatillos, 15 Jalapenos, 5 serrano chilies, 1/2 an onion, 3 cloves of garlic, handful of cilantro and salt to taste.

Fire roast the peppers and tomatillos. Remove the skins and seeds from the Jalapenos and just the skin from the Serranos. Put everything in a blender and blend well. I did add just enough water to get everything moving in the blender. It was spicy but not as much as you would think it would be with all of those peppers in there.
 
That's fantastic. Thanks for sharing the recipe, too. Dumb question: could you use canned tomatillos? Fresh ones aren't always available around here, and can get kind of pricey when I do find them off-season.

I don't see why you couldn't use canned tomatillos.
