Salmon on cedar wood

Hi,

this is my first posting on the board.
Last week we made asalmon for the first time. What shall I say... it was so good. :)

I bought a salmon slice with skin.

The coating was a sauce made of soy sauce, hoisin sauce, moustard, olive oil, butter, lemon juice
I did some cross slicings so the coating could penetrate the fish better.

I watered two planks of cedar wood for 2 hours.

Temperature was about 400F / 200°C

Then the fish and the planks were placed right upon the fire and the lid was closed.

20-25-min later.....

The meat was light pink and peeled off the skin quite easily.

Thank you. Maybe the pics are still to big. I will try it with 600x400 next time. So you are from Sweden. We are almost neighbours :)

Hi Steve,

could you tell a bit more about the tacos. Whats the idea? Sounds interesting, but I did not get your point yet.

Fish tacos are tacos for vegetarians that think that fish is a vegetable. Same idea as the veggie that says "I don't eat meat cuz I'm a vegetarian. I'll have the chicken please."

Looks great! I've long meant to do fish on planks.

I also love how international this site is. Canada, UK, Norway, Sweden, Germany......

It's fun to see how people do things in different regions and countries.
 
Looks tasty. The sauce sounds interesting. Did it overpower the fish at all? As an avid fisherman and fish cooker (I put 40 fresh Columbia River sockeye in my freezer just last week), I like my fish more simply done. Here is my simple standby with a few variations. Try it sometime.
1. Coat the fish liberally with Johnnies Seasoning salt. Let rest in the fridge for between 30-60 mins.
2. Cook on cedar plank.
3. When it's finished, pull it off the cooker. Immediately glaze with a 1 part honey, 1 part real butter, 1 part brown sugar mixture.
4. Instead of the above mixture, glaze with rasberry pepper jelly.
5. Instead of either glaze, cover the fish with a moderately thick layer of parmesan cheese before cooking. While cooking, the cheese will melt and create a nice crust on the fish.
