Soaked a whole 4.5 lb bird in Wicker's for 'bout 6 hours...
...started a fire...
...opened a bottle of Santa Christina...
...fired up the WSM equipped with the reversible Cajun Bandit ring then let'er rip!
Seasoned inside and out with Old World seasoning with a red onion stuffed inside.
The bird wasn't on butt 45 minutes when it registered a 168ºF reading.
It was removed from the spit and foil-tented to rest a bit.
The dinner plate was served with steamed broccoli, the red sliced onion and skinned, halved red skillet baked potatoes.
This shé~cone was luscious! Tender and moist inside with the skin just the right texture. Wicker's does a wonderful thing to chicken.
And using the WSM for rotis is perfect. The bird is direct over the heat of the coals yet doesn't burn, no flare ups... Beautiful..
The CBRotisserie ring is daggum near perfect. Certainly a nice investment.
Thanks for visiting
