Rotisserie Chicken with Stuffing

So had a hankering for some good chicken on the rotisserie and some stuffing. Never made stuffing that was always the CEO's domain.
Anyhow, this is how it went

Something going on here

Nice 4 lbs. Free Range local farm chicken, brined all night in salt and sugar. A lot of stuff involved with this one. Going to make a stuffing for both in the bird and a separate slightly different side dish.

Onions on some EVOO first then the Granny Smith Apple, some frying pepper, celery, garlic, Greek olives, fresh ground and Kosher all getting jiggy on the burner, Sage, rosemary and Thyme on also

Into the bowl with the cornbread white bread breadcrumbs, working up a thirst so some Curmudgeon to help out

Bird stuffed and trussed with a half a lemon inside to keep everything in and add flavor and juiciness, Kickin Chicken on the outside.

Side dish stuffing will have an egg added, some butter, some of the Kicken Chicken, and a little move EVOO along with some Peccorino Romano sprinkled on top
in a buttered pan

On the Genesis Rotisserie, forgot the action shot, might have something to do with the third Founders Curmudgeon.

A nice platter, the chicken was incredibly juicy and delicious and both stuffings were superb

Bill, Bill, Bill - you and your Curmudgeon. Always make you cook the best meals. I can see my plate, I just can't eat from my plate :(
 
Ahh...seasonal Fall cooking, gotta love it. Chicken & stuffing look really good.

P.S. Good choice of kitchen knife, can't go wrong with MAC.
 
Thanks Guy's, and Jerome the Mac is the first "expensive" chef knife I bought myself almost two years ago. It was scary sharp, I mean scary, when I got it. It changed the way I do my meals it is that sharp. It is still scary sharp as I use the ceramic steel on it before and after each use. It is so sharp still I have not even thought about sharpening it to this day, and I use it almost everyday.. Highly recommended.
 
Man that is some gooood lookin chicken!! Every thing looks outstanding! Correct me if I'm wrong though, but I think the peas are canned? Other then that A++

Your right of course Morgan, grill shots are important. Next time I will add extra. And Six yes they are canned baby peas. I have no fresh peas from the garden any more. I will have to exact some form of punishment from the CEO. I have just the plan on that! I will carry it out this evening.
