I have mentioned before that I think GrillGrates make more sense with a 5-bar grill vs. a 13-bar one. Although controversial, they do even out heat, and they do have the effect you describe.I know this is a tender subject for some, so I won't delve too deeply...but to me, the GrillGrates are the Great Equalizer here. The "flavorizing" surface is right below the cooking surface so the effect is intensified, the searing capabilities are well beyond what I would ever need, and any flareups are kept well away from the cooking surface.
I am hoping to make a personal use Silver A 2-burner that needs grates. I am having a hard time not wanting GrillGrates for it. Seems like they would be perfect for a grill with only 2 burners (and a single row of flavorizer bars) where evenness might be an issue.
