So i got a pack of Iberico Costilla ribs.

Added some good rub.

About 2.5 hours in

3.5 hrs in. Wrapped in pink paper at this point.

About another 1.5 hrs. Only one rack glazed. Blues Hog.

Sorry...no plated shots. Served with Caesar salad and really good mac and cheese. Some of the best ribs I've had, for certain.
