Ribs on the SmokeFire🔥 using smoke boost.

Looks good. How long did you run smokeboost? How many hours until you wrapped? I have been cooking without wrapping but may start wrapping again. It’s tough getting the right bark and having it tender

I ended up running smoke boost for 1.5 hours and wrapped at about 2.5 hours total, they have been on an hour and 45 wrapped and I’m about to pull em and let them go maybe another hour.
The SmokeFire has been rock solid today, app worked great and even though its windy I have had zero issues with temp.

wrapped with a little honey, butter and pineapple juice. Didn’t have any apple juice so I figured pineapple sounded good.View attachment 6537

I'm going to have to keep my eyes on this thread. Pineapple juice differs from apple juice in more than just flavor, it contains an enzyme that'll tenderize or break down meat. I'm curious to see what effect this apparently has on your ribe.

I knew that going in, I don’t do ribs enough to know how much difference it made, but great observation.

I've never used pineapple juice in a marinade, for a few reasons, but not the least of which is a fear of turning the meat to mush, and a potentially unpleasant taste. Thanks for helping to dispel those thoughts. Sounds like dinner was awfully good.

I have never used pineapple juice, but when making Korean BBQ ribs the marinade Koreans use a puree of Korean Pear, or if you do not have that lemon lime soda. We have had those in the marinade for 12-15 hours the meat was very tender but still had some chew.

@Bruno you said you changed the temp from your phone??? That's new right?

Also, ribs look fantastic. I love everything do to with pineapple, so it all sounds good to me.

Nice cook Bruno! I mix pineapple juice and red wine vinegar to mist my ribs when I'm feeling festive. Creates a really nice flavor, whether putting it into the foil when wrapping or if just straight smoking them without wrapping them. I've also created a mop sauce using pineapple juice. Nice call!

Yeah it’s a new feature and it’s awesome!!
Ribs were the best I’ve done or close to it. They went so fast I didn’t get a Good plated picture.
