Rib eye Dinner

Still on the road so I couldn't smoke anything for Smoke Day. Will have to catch up to that soon. Decided on some nice Rib Eyes from Costco. To go along with them did some Roasted Potatoes stuffed with Mushrooms and Cheddar Cheese and a vegetable/fruit medley. Here are a few pictures from the cook.

Did the potatoes and the mushrooms earlier in the day. Used nice big russets and baby bellas for this cook.



Got the veggies all prepped. This time used sweet onion, red bell pepper, yellow squash and some pineapple chunks.



Here is a shot of all the ingredients for the stuffed potatoes. Did a coarse chop on the mushrooms, some shredded sharp cheddar cheese, couple of scallions and some sour cream.



Pulled the steaks out of fridge.



Let them rest and get up to room temperature.



Got the potatoes all stuffed and ready to go.



Veggies in their cast iron dish.



Veggies on grill direct and potatoes on indirect for a 15 minute warm up.



Steaks on. First flip, getting sear.


Moved over to indirect to finish cooking. These steaks were about an 1 1/2 inch thick. About 10 minutes total cooking time. Cooked to 130.

These were probably the best steaks we've had in a long, long time. Everything turned out great. We had a great Smoke Day, but not too much smoke. Will correct that soon. Thanks for looking.
