Reverse seared cowboy. Smokefire perfection

It was my Bday today. Wife wanted to go out to a nice restaurant. I said why, my steaks are better. I bought the fattest Cowboy Steak I could find today. Besides I wanted to try out my new Grill Grates. We stayed home and it was so worth it. Smokefire perfection all the way through.... Grill Grates made great sear marks. One of the best steaks I ever tasted.

Why in the world do you imagine that's not a City Slicker Steak, too?!

But seriously, folks, how did you grill it? First indirectly? Till what temp? What grill is this? Did you have part of it covered with GG's, while part open where the pan is?

I changed the thread title to reflect this was done on my SF EX6. I used smokeboost for the first hour. Internal temp was only at 90. I then raised the SF temp to 250 and kept it in until internal temp was 120 . Raised the SF temp to 600 and seared it for four minutes in each side, turning the steak to get the diamond sear marks
