I am about 20 or so smokes into my WSM journey, and never had to refuel. I put on 15.6 lbs of boston butt last night around 11:30pm. The lit temp (which is consistently 20' lower than actual was showing 200-210 since I woke up around 7:30am. That's lower than usual when I do an overnight. I pulled the lid half hour ago to get a temp on the two butts and the lid temp won't come up past 180-190.

I'm thinking I'll need to add some coals as both butts have about 30' to go before I'll pull them off. How do you guys do it? Through the door? Pull the middle section off? And roughly how many lit briquettes?

I'm not really on a time constraint people aren't here until 4 and dinner btw 5-6 (so i've still got 6-7 hours, but it shouldn't take that long to cook em).

I may get banished from the forum, but I usually throw some unlit in through the door. Sometimes it takes half an hour to get brack up to temp, but it has never seemed to affect my typically awesome results. :)
 
I lift the center section off with my Weber mitts to add coals. If you want higher temps, add lit - longer cook add unlit (guess that part was too obvious…sorry!:rolleyes:)
 
I usually do the "hot squat" (remove the mid and top and add charcoal) letting the fire start to burn clean again before reassemble.

That's what I do also. It's never had a negative effect on the finished product that I can detect. The only time I light them in a chimney is if I let the coals burn down too far to get the unlit going again.
 
Thanks guys. I put a couple of unlit through the door and left it open for a couple min to increase airflow. Once I noticed those coals starting, I sealed her back up. Temb is back in range. About 15' to go.

Just used it for my first overnight cook. Question did you dump the coals or just place the basket in the cooker? I dumped 2 baskets full on top of the original fuel?
