Reflector Oven Stuffed Pork Roast

Hello All,

I just returned from a weekend Boy Scout Camp-out. The boys made Jambalaya from scratch with Mr. Dale, one of the other leaders, as part of their cooking requirements for advancement. To supplement the jambalaya, I made a Stuffed Pork Loin Roast on my camp reflector oven. I have posted the recipe before but thought y'all might like to see the reflector in action...

The roast was originally to be for the adult leadership but we nearly had a riot on our hands and decided to share. Dinner was excellent - the scratch jambalaya was wonderful. Mr. Dale has a special cast iron cooker for jambalaya which apparently I failed to take a picture of...

That's pretty cool!! I really dig camp fire cooking and that rig looks fun!! I bet that pork roast hit the spot out in the woods!!
 
Love it John, Hunt Camp cooking is one of my favorite things. Good thing you are doing with the Scouts, well done bud. One of my life time best friends is a Scout and Scout Leader around Baton Rouge. His name is Van Bailey, if by chance you know him.
 
Agreed!!! no doubt the rotisserie is manual, so how did you operate it....turn every once in a while? or have one of those scouts on constant rotation duty?:D
James - I just turn it every few minutes but the scout idea is not bad now that you mention it...

I have never met your friend but I will keep my eyes open for him. We have a great group of dad's that work with our troop. Many of them are awesome cooks/camp cooks. It is great to bond with them in scouting and pass along our love of the outdoors and cooking to our boys. I especially enjoy CI cooking and also whipped up a 'Dump Cake' for them this weekend...

Thanks Rich - I made it myself after seeing a commercially sold one in use at the Battle of New Orleans reenactment about 15 years ago. I talked to a re-enactor in their field kitchen about it as he was cooking a whole turkey next to a trench fire. I looked one up intending to buy it but they wanted around $400 for it. Thus my creative juices were stimulated and a few dozen hours and a couple of hunks of scrap aluminum later, my baby was born. I have used it to cook many roasts and chickens over the years...

Thanks everyone! I loved the feedback. I have found that I enjoy cooking stuff outdoors. Sometimes I use the expensive offset smoker, sometimes it is a hot rock from a campfire and a scrap of aluminum foil... or anything in between. The bottom line it is all about enjoying the process...
