Our neighbors recently had their 3rd baby, and we like to helpout when we can. So we are sending over dinner for the family tonight. AND what better to make for friends? Smoked pulled pork tacos / sandwhiches of course.

And obviously its been raining since friday, but that is no reason to NOT smoke meat. 9 lbs pork butt. Bad weather and was in the low 50's for the most part with a little wind. I figured id have some issues holding my temps. FALSE, the WSM ran like it was on cruise control. Filled the basket w/ couple chunks of peach and a couple chunks of hickory. Menion method about 3/4 of a lit chimney. I set it and it ran within 15* of 295* for 8 hours before i threw in couple more pounds of kingsford blue.
