Rainy Day Brisket

Was a rainy day in CT but still managed a brisket and some indoor sides of baked beans and mac n cheese.

Thanks! Was a little smokier than I prefer but was a hit with everyone else. I like a milder smoke....still dialing in the technique on the WSM...

What type of wood did you use? Hickory and definitely mesquite can be too strong if used in high quantity.

Used apple, oak and pecan. Everyone loved it and the leftovers were a hit, I think if I just hold back a piece or two of wood it will be in the sweet spot for my taste...

I prefer to avoid the ashtray effect too much smoke brings as well so I rarely use more than a couple pieces of wood. Cook looks great.
