Finally, I got to do one of these. I've been wanting to for probably a decade or more, which was the last time I cooked one, but in the oven. Came out great, but I think when I reheat (fry in a CI Skillet) it will be even better. (everything is better fried in a CI Skillet)

@ChuckO that's the way to represent the West Coast! :) Looks like you've settled into the new place just fine. I've got a double cut chop from my last rack of pork on deck for a late dinner after work tonight! RoP is a fave from CostCo....yours looks excellent!
