this might be a top 3 meal for me to make. there's just something about grilled rack-o-lamb that motivates me.

heck, it should motivate you... rack-o-lamb is kind of a big deal, right? Usually busted out for special occasions - Like the end of a school year Congrats to the Ms's !

What temp did you remove the lamb?
Probing 125°. Then rested, tented for 10 minutes. Then sliced. I buy the largest rack Costco sells to get this pink center. Usually around $27 a rack or more. Avoid anything smaller as they’re just bones with no meat. I like that fat lollipop.

Indeed. We just had a very good 60 days. And we have an amazing upcoming vacation. Life is good. Even with all her challenges.
