Quickie Tuesday Night Tri Tip

The untrimmed Choice roast had been marinating since Sunday in Wishbone Italian, TJ's black pepper sauce, worcestershire and some leftover rub I had lying around.
I planned on trimming it, but forgot. Not a big deal as it wasn't overly fatty.

Got home at 5:30pm and assembled my fire with oak chunks.

Assembled the WSM and temps quickly stabilized to 250...on with the meat.

When IT reached 139, I took it off the WSM and put it on the gas grill for a sear.

Rested for 15, sliced and served. Deeeeeeeeeeeeeeeeeeeeeeelicious!

That looks excellent Chris, got to give that a try, I am loving my Grill Grates, use them all the time now.

That's a nice fat cap on your tri-tip. I wish I could get tri-tip like that. The meat coma is a feeling that I know all too well, but it is indeed a true mark of excellence.
