Quick Tenderloin cook

Had a couple of monster size pork tenderloins the other day. This was US pork, figured they had to come from Texas. ;)

One seasoned with a kibbeh spice mix and the other with a regular bbq approach (mustard, rub, glazed with sauce). This cut is always handy to have around, they thaw and cook quickly, very little waste. I used a Raspberry Chipotle sauce for the glaze, very nice with pork.

Plated with some green beans (blanched, then sauteed with onion and garlic) and a favourite Roasted Vegetable and Orzo pasta salad.

Wonderful looking plate Mark. That tenderloin glazed with the Rasberry Chipotle Sauce sounds exceptional! The Kibbeh Spice sounds interesting. Not sure I've every tried it. Might take a peek at our World Market and see if I can pick up some. That Roasted Vegetable and Orzo salad really caught my eye too.

Thanks for the comments folks. Cliff, World Market likely has something similar. Ours was just a jar of spice whose ingredients list as cloves, marjoram, cumin, pepper, cinnamon, allspice, and rose. Made in Lebanon. Never actually made kibbeh, but it's a nice spice mix.

The roasted veg and orzo salad is one of our favourites. Bell peppers, red onion, zucchini, eggplant are diced and roasted. Blended with cooked orzo, dressed with lemon juice and olive oil. A little fresh garlic added. Crumbled feta cheese too, as well as some shredded basil and best served at room temp. Mmmm.
 
Good cook right there. I'd be partial to the raspberry chipotle tenderloin. Really like that salad, too.
