Question about Buffalo Turds, or whatever they're called...

I'm making Carne Asada for some friends tomorrow night and I want to make some ABT's as an appetizer.

Now, I know that these can be made on any source of heat but I really think smoking them would be a fantastic way to season and finish them, as well as giving me a chance to show off my new smoker.

My questions are these:

1. I'm considering about 2 hours on the smoker at around 250 or so. Does this sound right to everyone?
2. How much charcoal should I consider using as it's only going to be burning for a couple of hours? I'll still need to get the WSM up to temp, but I don't want to finish the ABT's and have 10 hours of fuel left, you know?

Anyway, I'd appreciate some help if anyone could!
 
Here's my take on the venerable ABTs.

Really the only thing that needs to be actually cooked is the bacon. So I go hot and fast with ABTs. By the time the bacon is cooked to a reasonable level, the jalapeno is tender, and the filling is warmed.

So if the ABTs are the only thing you're putting in the cooker, then I would run the cooker temp way up. Maybe 275-300. For a ~2 hour cook at that temp, I would use one chimney of fully lit and put it right on top of a small pile of unlit. Definately don't fill the whole ring. Wait for the cooker to come up to temp, then add the smoke wood and ABTs.

Of course you know the rules, if you don't post pictures of the results, it didn't happen.

Alright. I think I can handle this! I'll take a bunch of pictures of our meal and let you guys know how it turned out.
 
Right on. I did them for about two hours at 300. I would probably go lighter on the cream cheese next time. Maybe add some hotter peppers in the cream cheese too.
 
Hi Sam they look awesome. If you can get it you might try the Farmer John's jalepeno Bacon. But now that I look closer you are in Canada so you probably don't have FJ product. california folks should though. We tend to use it in most meals with bacon now... I just went out and bought cheap bacon. Ideally I'd like to make my own and use it for these. I'll probably be making these again this weekend, but will add some serranos to the mix to really give em some kick!
 
Thy make flavored cr cheese.... Wife likes pineaplle (cuts the heat with a ill sweet) unlike jalapeño cr cheese... (Chase the heat with a ill extra heat )
