Pulled Pork, Corn Tortillas, Kale, Mango Salsa

and Baked Beans my way.
I had a small pork butt defrosted (4.5 lbs), rubbed with Kevin's ButtRub. I like the ginger and allspice addition Kevin. Had a few things to do first thing in the morning, so didn't get the butt on until 10 AM. A bit of Jersey rain going on, but I can work with that -- smoked under the roof overhang.
Mango salsa made and into the frig.

Around 4 PM, hit 165F, so I glazed with some homemade sauce mixed with pomegranate molasses, splash of cider vinegar, a little more salt, honey, apple butter (very thick, spreadable apple sauce for those that don't know), a pinch of the rub and a couple knobs of butter whisked in. Pretty too.

I love corn tortillas, so that's the way we did it, along with kale, mango salsa and baked black beans.
Come over and have a plate!

That is exactly what I missed! Everything that you did right. Great looking meal Gary!

PS. The Mango Salsa looks great. I am going to try a Pineapple salsa next week. Wish me luck!

Thanks to all for the kind sentiments. Just google "mango salsa" -- most of them run like this:

Ingredients
• 1 mango, peeled and diced
• 1/2 cup peeled, diced cucumber
• 1 tablespoon finely chopped jalapeno
• 1/3 cup diced red onion
• 1 tablespoon lime juice
• 1/3 cup roughly chopped cilantro leaves
• Salt and pepper
Directions
Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well. Season with salt and pepper, to taste.

I add a hearty dash of ground ancho chili to the mix as well, and 3 chopped jalapenos, not a mere Tbsp. - G
