Pulled Pork advice check.


 
I typically don’t start checking for probe tenderness until it reaches 170 or so. If I’m able to easily sink my finger into the fat cap, l foil wrap and finish it off in the oven until it’s 206 or so. Rest for a few hours.
 
I do wonder what exactly people are cooking. An uncooked pork shoulder will weigh in the 14 to 16 pound range and is comprised of the picnic roast and pork butt (also known as a Boston Butt). Since pulled pork is not a cut of meat, what exactly are people cooking ?
I use Boston Butt. Picnic Roast comes in at a close second, definitely not as tender.
 
This thread got me itchy to cook. So when I went to the local Food Pig (Food Lion) for milk and bread I glanced at the butts...... Swift brand, bone in, ninety nine cents a pound. Effective 20 minutes later, my chest freezer is now full. Please do not tell my wife.
 
Wow. I haven't seen 99 cents in a long time.

When are you smoking some. I can't promise to stay quiet, but a belly full of pulled pork sammies will go along way :devilish:
