PSB or advertisement for Guinness

I could not in my neighborhood to buy a suitable chuck roast. So I bought 5 lb beef neck, tied

and went by Larry recipe. Here are some pictures from the run

It was a sloooooooooooooooooow. Here I am in the middle of stewed under foil

and I finished after about 7 hours in the dark and without photos

Here are pictures from lunch the next day. On the left side with Swiss cheese, on the right side with Gorgonzola.

nice looking cook! and yes guiness could use that as an advertisement! I think i need to buy a pan specifically for braising on my WSM.

PSB does take a long time to cook, butt every minute, hour is well worth it.
And your sandwiches look absolutely AMAZING!!
Mr Wolfe hit the jackpot with this recipe! One everybody should try at least once!

Regarding the comments about the photos - you don't need an expensive camera to take good pictures. You just need know-how and a bit of talent... Mildo obviously has that, in spades!

The PSB looks amazingly good!

sadly, I've never made PSB, since my beautiful wife does not like peppers, in any shape or form.
one of these days I'll make it for just me, and our son. :)

I do not know why but I like to document the progress of cooking on Weber.
It is not necessary to use an expensive camera. But it is true that with DSLR / SLT is more opportunities to play.
