All ready for the WSM tomorrow. Plan is using lump and charcoal to run a little hotter. Foil the water pan. A chunk or two of mesquite wood. Full chimney of lit coals on top. On WSM until IT of around 125 and then toss on Performer over direct coals until IT of around 135 to get a nice crust. Will post follow up photos tomorrow. I used the Herb rub found on site. Sounds like a plan, but why not just throw it over the coals on the wsm? Since it already lit and all. I've done this before, and it works fine. Just plop the top grate on top of the charcoal ring.

You'll have to let the coals heat up a bit once you take the body of the cooker off. Should be fine.
 
Now I'm thinking of using my Rotisserie and Performer..too many options. Before we had my Webers we used a "Showtime" rotisserie in the house. It turned out pretty good. Quick vote a) WSM and Crust up on Performer or b) rotisserie
