I'm just curious to hear people's thoughts and opinions on this. Today I opened up my 35 lb. bag of Fogo natural lump charcoal. As is generally known with lump charcoal, there can be a wide range of chunk sizes in the bag, from the size of a softball all the way to the size of a pebble. So anyway, I took it upon myself to sort the contents of the bag into large, medium, and small chunks. So depending on what I'm cooking, I can choose the appropriate size of lump -- e.g. the small chunks would easily fall through the charcoal grates if using the Minion method for long cooks, but are perfectly suited for charcoal baskets when doing some high heat searing. Just wondering if any other TVWBB members like to "cherry pick" specific sizes of lump charcoal depending on what they're cooking.
