Porky the Pig Chops

I went to see my friendly butcher this afternoon, even though he works in a chain store, he always has something special for me.

He pulled out some nice rib loin chops and I had to have them!

I brought em home and made a quick brine with water, brown sugar, salt, pepper, apple cider vinegar, granulated garlic and anise seeds.

Brined em for a couple of hours and then got em on the grill over blazing high heat for 3 minutes a side, then indirect for the remainder of the cook.

While those were cooking I fixed up some Brussel Sprouts the only way my wife will eat them.

Started rendering some double smoked bacon.

Then tossed in the chopped up sprouts.

Added some brown sugar at the end to finish them off. Fantastic!

Here's a plated pic with the chop (bathed in Sweet Baby Rays), Brussel Sprouts and some celery root purée.

The chop was juicy, tasty and perfectly cooked.

Fantastic grilled chops Stuart. Brussels sprouts look good but you still couldn't get me to eat those things no matter how much bacon you added to them.
 
Great looking Chops Stuart but I really like the way you did the Sprouts. I think I would like them that way too. Stay dry you got rain coming your way.

You might be surprised (or might have to be surprised, I guess). My sister-in-law always served a great side dish at family gatherings which was one of my favorites... it was years before I figured out that the green things were brussel sprouts (which I also detest).

And yes, there was bacon.

I think the brown sugar and bacon really change the flavour. My wife DETESTS Brussel sprouts steamed and served with butter...or cooked any other way really, but she actually likes these. I personally love them, but the only thing I won't eat is liver.
