Pork Shoulder cooking= Timing Issue

So it seems I got a little over zealous with my start time for the two butts and will be done at 10am and we Eat at 6pm!

Can I put the butts in the fridge after they are done and warm them back up later and then pull them?

I need some guidance on how to get this all right so I can pull them at 5:30 and eat at 6

Personally, I'd pull while they're warm (much easier) THEN put 'em in the fridge and re-heat in a pot later on the stove (some would put 'em in a h.d. (like a freezer) plastic bag and do a hot water reheat (like a sous vide) but I think that would take too long to get up to temp).
 
If I was facing this situation, I would pull the pork after it's rest and then I would re-heat it in a frying pan while being served. Add a little olive oil when heating it up, and if you really want a treat, cook the the taco shell in the frying pan too. Pulled Pork Fried Tacos are amazing, but not necessarily good for you :)

While I'm not experienced I am one of those whom freezes pulled pork and re-heats it in boiling water in a stock pot. While it may not help you today, I smoke shoulders in my spare time, shred them, then freeze dinner-sized portions in food saver bags (flat). I use the generic bags from Amazon, which are extremely economical.
 
Definitely pull after the rest whilst still warm. Let it cool, bag & refrigerate.
Fire up the oven and slowly re-heat. Adding a little water or olive oil to the bottom of the pan to prevent it drying out.
I did this on Xmas Eve for dinner on Xmas Day. Beautiful.
