Pork Sandwiches

Pounder out pork loin chops, seasoned with sea salt and black pepper. Grilled up on the GGs and put on a Hawaiian King Burger bun with mayo and bread and butter pickels. I had a second because it was so good.

Nate, your chops look delicious. Just one question about your cook, why upside down grillgrates for the chops?

Bob, I use the GGs upside down 99.99% of the time for anything I cook on them. I think it gives a better color to the meat as well as the caramelization I like. Steaks turn out awesome too. I really don't care about grill marks. I actually bought these intending to use them as designed but found that I could use the other side. Since then, this is the way I use them. The main thing was to eliminate flare up I would get on my gasser, which they do. I use them the same way on my kettles and the holes allow the drippings to fall into the fire as with regular grates.
