Ended up cooking for at least three families who "needed" a little BBQ. 9.3 lb pork picnic I found for $.99/lb awhile ago and froze and a 15.8 lb CAB packer. I planned on 14-18 hrs and pulled after 15. I overcooked the brisket even though I pulled when it probed tender (195-199). By the time that happened, it was too far gone to pass the tug/over-the-finger test. Ahhh, well, I cut the flat thick; it was tender and flavorful, so I got that goin' for me. People seemed to enjoy it in the torta rolls I brought them.
Picnic turned out great. Super tender and moist. As the photo proves below, the picnic sort of collapsed when I picked it up out of the Bullet.
Pretty simple dry rubs: Montreal Steak seasoning with packer and two different rubs mixed together for the picnic that I had left over from prior cooks.
PS I love the Minion Method. One (very full) ring was still going strong at Hour 15.
